Ingredients

  • Semolina flour. `Which is made of enriched durum wheat.
  • Sugar. I used raw cane sugar. You may use any other sugar or sweetener.
  • Milk. I used unsweetened almond milk. Use other unsweetened plant-based milk.
  • Vanilla extract.
  • Oil. I used avocado oil. You may use vegan butter.
  • Salt. To bring out more flavor.
  • Toppins: Cinnamon sugar and frozen mixed berries.

How to Make Semolina Pudding

Follow along with my easy instructions to see how to make semolina pudding in your own kitchen!

1. Add dry ingredients. Add semolina flour, sugar, and salt into a saucepan over medium-high heat.

2. Add almond milk. Whisk to combine the dry ingredients with almond milk and bring it to a gentle simmer. Whisk continuously to prevent a lump, so it doesn’t stick to the bottom of the pan.

3. Add oil and vanilla. When the Griessbrei starts to thicken, add oil and vanilla extract.

4. Cook. Lower the heat and stir around and let it cook until thicken like a porridge.

5. Serve it. Remove it from the heat and fill it into a bowl to set. You may serve it warm or chilled with your favorite toppings. Enjoy!

Tips

  • Do not overcook it. It only takes 5 minutes from start to finish and it thickens more as cools down.
  • Whisk constantly. Whisk continuously to prevent a lump, so it doesn’t stick to the bottom of the pan.
  • Taste-test it. Taste to adjust flavor and sweetness.
  • Use unsweetened plant-based milk. This way you can control how much sweetness you want to add to Griessbrei.

Substitutions

  • Use other flavorings and extracts. Add citrus zest such as one orange or lemon zest.
  • Make the chocolate version of Griessbrei. Add about 1 Tbsp of cocoa powder to the recipe.
  • Use other unsweetened plant-based milk. Coconut milk, soy milk, rice milk, or oat milk.

  • You can also fry the leftover Griessbrei with butter. Cut it into small cubes and fry until it is crispy and brown on both sides.
