Add dry ingredients. Add semolina flour, sugar, and salt into a saucepan over medium-high heat.
Add almond milk. Whisk to combine the dry ingredients with almond milk and bring it to a gentle simmer. Whisk continuously to prevent a lump, so it doesn’t stick to the bottom of the pan.
Add oil and vanilla. When the Griessbrei starts to thicken, add oil and vanilla extract.
Cook. Lower the heat and stir around and let it cook until thicken like a porridge.
Serve it. Remove it from the heat and fill it into a bowl to set. You may serve it warm or chilled with your favorite toppings. Enjoy!

Tips
Do not overcook it. It only takes 5 minutes from start to finish and it thickens more as cools down.

Use unsweetened plant-based milk. This way you can control how much sweetness you want to add to Griessbrei.
Substitutions and variations to this recipe
Use other flavorings and extracts. Add citrus zest such as one orange or lemon zest.
Make the chocolate version of Griessbrei. Add about 1 Tbsp of cocoa powder to the recipe.
Use other unsweetened plant-based milk. Coconut milk, soy milk, rice milk, or oat milk.

Add egg in. Cook Griessbrei until all liquid is absorbed. Add yolk and then fold whisked white egg into it and cook for additional 3 minutes on low heat.
You can omit the sugar and make Griessbrei savory and serve it with eggs and sausages for breakfast.

Store it in an air-tight container in the fridge for up to 3 days. Serve it chilled or heat it in a microwave for 30 seconds.
You can also fry the leftover semolina with butter. Cut it into small cubes and fry until it is crispy and brown on both sides.

Serve it for breakfast, dessert, or snack. Some even serve It as a light sweet lunch or dinner.
