Celeriac Coleslaw

This creamy celeriac coleslaw, also known as celery root coleslaw, is so simple to make. It is crunchy and full of flavor. Serve it as a perfect side dish to any dish you like.

This vegetarian celeriac salad recipe is a perfect refreshing side dish. You make this raw salad with crunchy celery roots, walnut, and simple yogurt dressing. This salad is also known as celeriac remoulade.

Do not overlook the celery root at the supermarket anymore. This root vegetable has a deliciously creamy and crunchy texture to it. It has a taste similar to parsley and celery and it has a similar texture to turnips and potatoes.

Celeriac also called celery root or celery knob and is loaded with vitamins, minerals, and fiber and has many health benefits including heart health, improved digestion, and anti-inflammation.

Is celeriac the same as celery?

No, celeriac is the celery root but celery is the green crunchy stem.

What is celeriac?

Celeriac, aka, celery root/knob. It has a texture like potato or turnip and has a similar flavor and taste to celery and parsley. It has a nutty and earthy taste. You can eat celeriac raw or cooked.

What is the best way to eat celery root?

First, wash and dry the celery root and remove the skin. Then, rub some lemon juice over it so it does not turn brown. You may use it as follows:
Raw. Grate it and use it in a coleslaw salad recipe.
Blanched. Cut it into cubes and blanch it in salted boiling water until tender.
Puree. Cook and puree it and make it into a creamy soup.

How to prepare celeriac

Wash and dry the celeriac. Take a sharp knife and remove the top and bottom.

Then, peel the skin away just like you would peel a potato.

Wash and rinse it again.

Then, grate it using a grater or a food processor and add some lemon juice to it afterward so that it does not turn brown.

Ingredients

  • Celery roots. It looks like a giant turnip. Look for the ones with firm skin. They will be crispy and juicy. Use a coarse grater to grate them.
  • Walnut. Use halve walnuts and chop them. Take a chef’s knife and chop them. Any leftovers can go in my delicious walnut crusted salmon recipe.
  • Yogurt. It adds creaminess and tangy flavor to the salad. I used plain whole-milk yogurt. You may substitute it with sour cream.
  • Garlic. Optional. Goes well with yogurt.
  • Mayonnaise. Adds more flavor to the dish. You may skip it if you like.
  • Lemon juice. Bring out more flavor and prevent the grated celery root from turning brown.
  • Salt. 
  • Garnish. I used olive oil, chives, paprika, and walnut.

How to make celeriac coleslaw?

Follow my simple instructions to see how to make celeriac coleslaw at home.

Step 1. Prepare the yogurt dressing. In a bowl, mix yogurt, mayo, garlic, lemon juice, and salt and set it aside.

Yogurt, garlic, mayonnaise, salt, and lemon juice are added in a white bowl and mixed.

Step 2. Prepare the celery root (celeriac). Peel the celery root and grate it coarsely. You may use a food processor.

Step 3. Add grated celery root. Since the grated celery root turns brown fast, add in as you grate and mix it with the yogurt dressing and continue grating and adding the second celery root.

Step 4. Add walnut. Add the walnut and mix it in. At this point taste and adjust the seasoning and flavor.

Step 5. Garnish and serve it. Garnish it with olive oil, chives, paprika, and walnut. You may serve it at room temperature. But I recommend chilling it in the fridge before serving it. Enjoy!

Tips

  • Use garlic. Although optional, a hint of garlic flavor in the celery root salad goes well with yogurt.
  • Make ahead. This is a great salad to make ahead. Simply mix everything except the salt. Add salt right before serving. This way grated celery roots stay crunchy and not mushy.

Substitutions and variations

  • Substitute yogurt. Use sour cream instead of yogurt. Or use a plant-based yogurt to make the recipe vegan.
  • Substitute walnut. Use any other nuts ( peanuts, almonds, pecan) or even seeds ( sunflower seeds, pumpkin seeds) you like the best.
  • Add apple. Add one grated green apple to the mixture. Apple will add extra crunch, juiciness, and sweetness to the salad.
  • Add in veggies. Add diced cooked potatoes, grated fresh carrots, diced cucumber, or diced pickles.
  • Add in spices. Cumin, ginger, black pepper, or garlic/ onion powder. 
  • Add herbs. Dill, cilantro, parsley, oregano, mint, basil, or thyme.

Equipment

I used this grater to coarsely grate the celery roots. It is the best grater. Highly recommend it! It is so sharp that you grate everything in no time.

Storage

Store it in an air-tight container in the fridge for up to 3 days. If the salad looked dry to you when serving it, add a tablespoon of yogurt to make it moist again.

How to serve it

Serve it on its own or as a meze/ appetizer with naans, chips, or bread. Serve it as a side dish with the following meals.

  • Chicken recipes. Gluten-free sweet and sour chicken, fried chicken, chicken breast kabobs.
  • Beef recipes. Eggplant beef casserole, ground beef burger patties.
  • Seafood recipes. Baked salmon, salmon patties.
