Butter Oat Snap Cookies

Quick, easy & tasty biscuits that you and your children can make together.

Ingredients

1/2 cup rolled oats
1/4 cup plain flour
1/3 cup raw sugar
1/4 cup wholemeal plain flour
1/3 cup dessicated or shredded coconut
1 tablespoon honey
1 tablespoon water
60g butter
1/2 teaspoon bicarbonate of soda

Bananas are coming into season, and everybody is making due with what they can find in their pantry which means this banana bread with self raising flour is currently a hit in my house.  Lemon season is coming and my kids always ask me to make lemon drizzle cake by Mary Berry. Or these amazing Canadian pancakes brings a smile to all the little eaters in our house.

Directions

Preheat oven to 180 degrees C.
Grease a baking tray.
Sift flours into a bowl.
Add oats, coconut & sugar.
Stir.
In a small saucepan, melt butter.
Add honey, water and bicarb soda to melted butter.
Mix.
Pour melted butter mixture into flour.
Mix well.
Roll teaspoonfuls of mixture into balls and place about 5cm apart on greased baking tray.
Bake for 10-15 minutes or until golden brown.
Leave biscuits to cool on baking tray.
