Instructions
First, preheat the oven to 400 °F.
Next, grind 3 apples and dice one apple into small pieces.

Place all the apples in a hot skillet over medium heat. Add to it butter, honey, and cinnamon.
2 tablespoons butter, 3 tablespoons honey, ½ teaspoon ground cinnamon
Cook them until the apples are soft and caramelized and all the liquid has been vaporized.
Then, turn off the heat, add vanilla extract, and mix.

At this point, taste to customize the sweetness.
Then, take each tortilla and fill it with caramelized seasoned cooked apples.
7 wheat flour tortillas.
Next, add a layer of cheese and chopped walnuts over the cooked apples.
4 ounces of cheddar cheese, 4 tablespoons of chopped walnuts
To close it nicely, use some water or a mix of water and flour as glue.
Take some glue of choice and rub it around the tortillas.
Then, grab the side of the tortillas and flip them over to create a crescent shape.
Lay them inside a baking dish.
Brush them with some avocado oil. This helps crisp up better.

Place them uncovered on the oven middle rack and bake them for 20 minutes or until golden brown, and the cheese has melted.
Garnish them with walnuts and cinnamon.
Let them cool and ENJOY!
Notes
Tips
It is better to peel the apples. This helps to achieve a creamy consistency.
If you have time, pan-toast the walnuts to add a nutty flavour.
I only used 4 ounces of cheddar cheese. Use more cheese if you like.
Always taste test for the sweetness and adjust to your liking.
Add your favourite spices and herbs.
You can use egg yok instead of oil for more golden brown colour.
Instead of a crescent shape, you may roll up the tortillas and wrap them around the apples.
Double the recipe, or make it ahead for your next gathering.
Substitutes
Use any other tortillas of choice: Corn tortillas, oat tortillas, rice tortillas, or pita bread. Substitute wheat flour tortillas with grain-free tortillas and make paleo and gluten-free apple desserts with tortillas. Or use almond flour or coconut flour tortillas to make them keto-friendly.
Substitute apples with pears, peaches, bananas, apricots, blueberries, figs, mangos, or any other fruits you like as long as you remove their excess water or let their liquid vaporise while cooking them.
Use chopped cashews, pecans, hazelnuts, brazil nuts, almonds, or whichever nuts you like. You can also use seeds (pumpkin seeds, sunflower seeds) instead of walnuts.
Substitute cheddar cheese with cream cheese, cottage cheese, feta cheese, or any other cheese you like, such as mozzarella. Greek yoghurt is another option. Or use nondairy cheese to make a vegan apple dessert with tortillas.
Use ghee or coconut butter instead of butter.
Maple syrup, molasses, and brown sugar are great substitutes for honey.
Substitute cinnamon with nutmeg, cloves, allspice, or ginger.
Use lemon, lime, or orange zest instead of vanilla extract, or leave it out.
If you are short on time, you can always use apple pie filling as a substitute.
Instead of baking, you may fry them in a skillet.

Make sure to caramelise the apples well to vaporise all the liquid.

How to Fix Dry TortillasTake a kitchen towel or paper towel, damp it with water, and wrap the tortillas inside. Then, place the wrapped tortillas in a hot oven or microwave for a few seconds (15- 30 seconds). Steam gets created, and moist softens the tortillas.
