Wild About Mushrooms
As a vegetarian for many years, I’m always on the lookout for wild vegetarian and vegan recipes. This mushroom & spaghetti dish is perfect!
Ingredients
500g wild mixed mushrooms
3 tablespoons olive oil
1 clove garlic, finely chopped
2 small red chillies, very finely chopped
salt and freshly ground black pepper
1/2 lemon, juiced
450g dried spaghetti
50g parmesan cheese, grated
1 handful fresh parsley, roughly chopped
50g butter

Wash dirt from mushrooms and slice or tear.
Add olive oil to a very hot frying pay.
Add mushrooms, garlic, chilli and pinch of salt and fry quickly for 4 – 5 minutes, shaking and tossing constantly.
Directions
Remove from heat, add lomon juice and mix thoroughly.
Add ‘al dente’ spaghetti to mushroom mixture, along with parmesan cheese, butter and parsley.
Toss and serve with a bit more grated parmesan cheese.
