An exquisite chicken recipe that your whole family will love!
Mediterranean Chicken Ingredients
2 chicken breasts, skinned & halved
500g mushrooms, finely sliced
500g tomatoes, diced (canned or fresh)
2 cloves garlic, finely chopped or crushed
2 onions, diced
4 slices Swiss cheese
1 cup dry white wine
1/4 cup parsley (fresh is best), chopped
2 tablespoons olive oil
2 teaspoons thyme (fresh is best), ground
1/2 teaspoon salt
1/4 teaspoon black pepper
Mediterranean Chicken Directions
Add olive oil to a large frying pan and heat.
Add chicken, garlic and onion and cook at a medium temperature until chicken is browned.
Add tomatoes, wine, thyme, salt, pepper, mushroom and half of the parsley to the frying pan.
Simmer for approximately 20 minutes.
Put 1 slice of Swiss cheese on each chicken breast and simmer – covered – for a further couple of minutes until cheese has melted.
Serve over rice, using remaining parsley to garnish.
