Chicken & Mushroom Linguine

Quick, easy & sensationally tasty pasta recipe…

500g chicken, minced or very finely diced

250g mushrooms, finely chopped

1 onion, peeled and finely chopped

2 rashers bacon, rindless and finely chopped

25g butter

1 teaspoon garlic, crushed

1 teaspoon chilli flakes or powder (optional)

2 tablespoons sage or parsley or chervil

1 tablespoon mustard

1/2 cup cream

salt & pepper to season

linguini pasta (or similar eg spaghetti, fettucini) for 4 people

shredded parmesan cheese (to garnish)

fresh herbs (to garnish)
Heat the butter in a frying pan and quickly brown the chicken mince (making sure the frying pan is very hot before adding the mince), onion and bacon.

Add minced garlic, mushrooms, chilli, herbs and mustard.

Cover and simmer for 10 minutes until mushrooms have softened and the juice has run from the mushrooms.

Stir in cream and season with salt and pepper to taste.

Turn heat right down but keep warm.

Cook pasta in a large pot of boiling salted water until tender.

Drain pasta and toss through the chicken mix.

Garnish with shredded parmesan and fresh herbs.
